NKWOBI  Ingredients:-                             

Cow leg
maggi
palm oil
pepper fresh pepper
utazi leaf(it is bitter)
crayfish
Potash
Salt to taste

Boil your cowleg with only water till is done
Then pour palm oil into a pot add ur potash which is already ground
Mix until it is thick then add grinded fresh pepper,crayfish , maggi,salt
mix all and taste the sauce to make sure all is balanced
then add the boiled cowleg and mix, add the utazi leaves
Then nkwobi is ready
Note--u can as well prepare it with goat head,thats what is calld 'isi ewu'


NSALA SOUP:-Ingredients                                          

Chicken /Fresh Fish (preferably Cat Fish)                         
Crayfish
Fresh Pepper
Yam
Stockfish (the head gives more flavour)                
Dried fish
Uziza leaves or seed(grounded)
Uda
Maggi
Salt
Onions (blended together with the pepper)
Boil, pound the yam into a fine soft paste & mould into balls...
Steam the stochfish & dried fish with salt & pepper till they are soft.
Add the Chicken and Crayfish & simmer for 10mins.
Put the yam balls & Add two cubes of maggi.... (if you decide to use uziza seed & uda this is the time to put them)
The yams will melt to thicken the soup!

As soon as the yam melts cut the Uziza leaves & add to cooking, simmer for just a minute and.............
Your Nsala is ready

For the fresh fish: add the same time, you add the chicken but you must remove it as soon as its done to avoid having them in pieces by the time your soup is ready


JOLLOF RICE:-Ingredients
Peppers
Tomato
Onion                                                                
Chicken stock or meat stock
Oil
Rice
Bay leaves
Maggi
Salt to taste

Blend your peppers.. and tomato....add a a teaspoon of tomato paste to the blend.....
Add your oil to a heated pot
add some diced onions,hear for a few secs
add your blended peppers
add thyme seasoning,salt,maggi
curry if desired but just a little bit
add a few bay leaves(d secret to jollof rice)
cook the pepper to a thickened consistency
add your rice (pre-washed),your stock and some water
cook rice to a semi -medium consistency....taste for salt.......
add more diced onions
taste for salt and other seasoning....add as required.
turn on your convection oven, pre heat to 350 degrees......

Use aluminum foil to line your oven pan...... spray with cooking spray....add your rice.......cover with aluminum fol...make sure you poke holes in foil for evaporation........
put in the oven for about 20 mins....
Rice is done and never mushy....
